
Elvis's Hawaiian Bacon Wrapped Plantain with Peanut Sauce

Ingredients:
3 – 4 Each Sweet plantains (Should be very ripe)
24 oz Daily’s Cherry Applewood Thick Cut Bacon (strips cut in half)
Hawaiian Rub to taste
Directions:
Preheat oven to 375°F
Line a baking sheet with parchment paper.
Remove the peel from plantains and cut 1/2 inch bites diagonally (on a bias).
Season both sides of the bacon with the rub.
Wrap one piece of bacon around a piece of plantain... secure with a toothpick if necessary.
Place on baking sheet.
Bake for 15 minutes, flip, then bake for another 10-15 minutes. Serve with Thai Peanut Sauce
Hawaiian Rub Recipe
Ingredients:
1/4 cup smoked paprika
1/4 cup dark brown sugar
2 1/2 tablespoons pineapple sugar
1 tablespoon soy sauce powder
2 teaspoons granulated onion
2 teaspoons granulated garlic
1 teaspoon coarse salt
1 1/2 teaspoons black pepper
Directions:
Combine rub in a small bowl and apply to meat. If you are making ahead of time, store seasoning rub in an airtight container in the cupboard for up to 6 months after preparation.
Thai Peanut Sauce
Ingredients:
2 teaspoons vegetable oil
.25 oz garlic, minced
1 tablespoon minced fresh ginger root
1 oz hot water
3 oz peanut butter, or more to taste
½ lime, juiced
2 tablespoons Thai-style sweet chili sauce
2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 teaspoon Thai fried chili paste
Directions:
Heat vegetable oil in a medium saucepan over medium heat. Cook and stir garlic and ginger in hot oil until fragrant, about 1 minute. Add hot water, peanut butter, and lemon juice to the saucepan; stir until smooth. Stir chili sauce, hoisin sauce, and soy sauce into the peanut butter mixture.
Reduce heat to low and cook sauce at a simmer until thickened, about 5 minutes. Add Thai chili paste; stir.
