Elvis's Hawaiian Bacon Wrapped Plantain with Peanut Sauce

State Fair Demonstration Recipe with Chef Garrett Pittler

Ingredients:

  • 3 – 4 Each Sweet plantains (Should be very ripe)

  • 24 oz Daily’s Cherry Applewood Thick Cut Bacon (strips cut in half)

  • Hawaiian Rub to taste

Directions:

  1. Preheat oven to 375°F

  2. Line a baking sheet with parchment paper.

  3. Remove the peel from plantains and cut 1/2 inch bites diagonally (on a bias).

  4. Season both sides of the bacon with the rub.

  5. Wrap one piece of bacon around a piece of plantain... secure with a toothpick if necessary.

  6. Place on baking sheet.

  7. Bake for 15 minutes, flip, then bake for another 10-15 minutes. Serve with Thai Peanut Sauce

Hawaiian Rub Recipe

Ingredients:

  • 1/4 cup smoked paprika

  • 1/4 cup dark brown sugar

  • 2 1/2 tablespoons pineapple sugar 

  • 1 tablespoon soy sauce powder 

  • 2 teaspoons granulated onion

  • 2 teaspoons granulated garlic 

  • 1 teaspoon coarse salt

  • 1 1/2 teaspoons black pepper

Directions:

  1. Combine rub in a small bowl and apply to meat. If you are making ahead of time, store seasoning rub in an airtight container in the cupboard for up to 6 months after preparation.

Thai Peanut Sauce

Ingredients:

  • 2 teaspoons vegetable oil

  • .25 oz garlic, minced

  • 1 tablespoon minced fresh ginger root

  • 1 oz hot water

  • 3 oz peanut butter, or more to taste

  • ½ lime, juiced

  • 2 tablespoons Thai-style sweet chili sauce

  • 2 tablespoons hoisin sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon Thai fried chili paste

Directions:

  1. Heat vegetable oil in a medium saucepan over medium heat. Cook and stir garlic and ginger in hot oil until fragrant, about 1 minute. Add hot water, peanut butter, and lemon juice to the saucepan; stir until smooth. Stir chili sauce, hoisin sauce, and soy sauce into the peanut butter mixture.

  2. Reduce heat to low and cook sauce at a simmer until thickened, about 5 minutes. Add Thai chili paste; stir.
